Ingredients
  • 4 medium oranges
  • 1 medium lemon
  • 1½ c. water
  • ¼ tsp. baking soda
  • 6 c. sugar
  • 3 oz. liquid fruit pectin
Steps
  1. Remove peel from orange & lemon; scraping off excess white membrane from the insides.
  2. Put half the peel & ¾-c. water into blender container; blend till peel is finely chopped.
  3. Pour contents of blender into large saucepan.
  4. Repeat steps 1 to 3 with remaining peel & water.
  5. Stir baking soda into saucepan.
  6. Bring saucepan contents to boil, reduce heat, cover, & cook 10-mins.
  7. In the meantime, quarter each fruit & remove seeds.
  8. Put fruit into blender & pureé
  9. Add pureé to saucepan, cover, & cook slowly for 20-mins.
  10. Measure mixture from saucepan into large kettle/Dutch oven. (It should be about 3-c.).
  11. Stir in sugar, bring to full rolling boil, then boil hard for 4-mins., stirring occasionally.
  12. Remove from heat, pour in pectin, skim, then stir for 5-mins.
  13. Pour into hot, scalded jars & seal.
