Ingredients
- 4 medium oranges
- 1 medium lemon
- 1½ c. water
- ¼ tsp. baking soda
- 6 c. sugar
- 3 oz. liquid fruit pectin
Steps
- Remove peel from orange & lemon; scraping off excess white membrane from the insides.
- Put half the peel & ¾-c. water into blender container; blend till peel is finely chopped.
- Pour contents of blender into large saucepan.
- Repeat steps 1 to 3 with remaining peel & water.
- Stir baking soda into saucepan.
- Bring saucepan contents to boil, reduce heat, cover, & cook 10-mins.
- In the meantime, quarter each fruit & remove seeds.
- Put fruit into blender & pureé
- Add pureé to saucepan, cover, & cook slowly for 20-mins.
- Measure mixture from saucepan into large kettle/Dutch oven. (It should be about 3-c.).
- Stir in sugar, bring to full rolling boil, then boil hard for 4-mins., stirring occasionally.
- Remove from heat, pour in pectin, skim, then stir for 5-mins.
- Pour into hot, scalded jars & seal.
