Added extra oil and lemon juice at the end. Would also suggest some fennel seeds.
Ingredients
  • 1,5 kg eggplant (aubergine)
  • 1 kg red peppers (gogoșari, Romano, bell)
  • 250 ml sunflower oil (or any neutral vegetable oil)
  • 500 g onions thinly sliced
  • 2 teaspoon sea salt
  • 500 g passata
  • 2 bay leaves
  • 1 teaspoon ground black pepper
  • 1 tablespoon sugar or to taste

  • large heavy pan
