Ingredients
  • 1 cup tofu, cut into ¼-inch cubes
  • 1½ cup quinoa, cooked
  • 2 cups tomato, chopped
  • 1 cup black beans, cooked, rinsed
  • ½ cup baby lima beans, cooked
  • ¼ cup carrot, chopped
  • ¼ cup green onion, sliced
Steps
  1. Wrap tofu cubes in paper towels and let stand 5minutes. Then, in a nonstick
  2. pan, heat tofu over medium-high heat until lightly browned, about 10 minutes. Remove from heat and cool.
  3. Combine cooked quinoa with dressing of choice and mix well.
  4. Add tomatoes, black beans, lima beans, carrots, and green onion. Add tofu and stir gently. Serve
