Vegan Chicken Thighs
Ingredients
  • 3ea Tree Mushrooms (seasoned w/salt & pepper, roasted, and shredded )
  • ¾c Vital Wheat Gluten
  • ¼c Chickpea Flour
  • ¾c Seasoned liquid (flavor with vegan chicken boullion or roasted vegetable boullion with a splash of lemon juice, Get creative and make this recipe your own with your favorite seasonings, don't exceed the ¾c amount though)
  • 5 to 6 Rice Paper Sheets
Steps
  1. Add seasoning mixture into a large bowl with your pre-measured vital wheat gluten and chickpea flour. Stir until just combined and add mushrooms. After you've formed the dough in to a ball place on the table and pre-portion each thigh*. Wrap with rice paper and refrigerate for later use.
  2. The cook time for the mock chicken thighs when used in stews is approximately 30 to 40 minutes depending on the dough to mushroom ratio.
