  • 180g (1 cup) halved cherry tomatoes
  • 100g (⅔ cup) grated carrot, green papaya or cucumber
  • 135g (2 cups) chopped kale, stems trimmed and ribs removed
  • 50g (⅓ cup) toasted peanuts
  • mint leaves, fresh Thai basil leaves and flowers, lime wedges and grilled tofu, to serve (optional)
