Healthy Chicken Enchilada Pasta
Simple and easy chicken pasta made with ground chicken and enchilada sauce. Takes just about 30 minutes to make.
Ingredients
  • 12 oz pasta of choice may use gluten-free
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 1 lb ground chicken lean
  • 2 cups enchilada sauce
  • Kosher salt and pepper to taste
  • 1 cup shredded cheese lite
  • Optional toppings: green onions avocado, tomatoes, jalapeno, cilantro, etc
