Blueberry Overnight Quinoa

  • 3 tablespoons pure maple syrup
  • 4 tablespoons chia seeds
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 1 teaspoon psyllium husk powder (optional for an added fiber boost)

  • 2 cups fresh blueberries + more for topping
  • 1 teaspoon lemon juice
  • 2 tablespoons maple syrup
