Ingredients
  • 2 lb. (about 6) boneless, skinless chicken thighs

  • 1 c. low-sodium chicken broth
  • 1 (14-oz.) can fire-roasted diced tomatoes
  • 1 (14-oz.) can black beans, drained and rinsed
  • 1 c. frozen corn, thawed
  • 1 c. dry quinoa
  • 1 tsp. cumin
  • 1 tsp. dried oregano
  • ¼ tsp. cayenne pepper
  • Juice of 1 lime
  • ¼ c. freshly chopped cilantro
  • 1 avocado, sliced, for serving
  • Sour cream, for serving
  • Lime wedges, for serving
