Creamy Coconut and Vegetable Laksa
Ingredients
  • 1 tbsp vegetable oil
  • 230g jar laksa paste
  • 3 ½ cups Massel chicken style liquid stock
  • 2 tbsp grated palm sugar
  • 2 tbsp fish sauce
  • 375ml can CARNATION Light & Creamy Evaporated Milk
  • 200g Coles Nature's Kitchen Firm Tofu
  • 80g snow peas, trimmed, thinly sliced
  • 1 tbsp lime juice
  • 250g dried rice vermicelli noodles
  • 1 cup bean sprouts, trimmed
  • 2 green onions, thinly sliced
  • Fresh coriander leaves,
  • Sliced long red chilli, to serve
  • Lime wedges, to serve
