Vegan California ‘Carne Asada’ tacos
Ingredients
  • subheading: • Broth:
  • • 6 cups of water
  • • 2 tbsp soy sauce
  • • 2 tbsp hoisin sauce
  • • 2 garlic cloves crushed
  • • 2 to 4 bay leaves
  • • 2 tbsp of thyme
  • • 1 onion quarter cut
  • • 1 tbsp liquid smoke
  •

  • • 2 cups of vital wheat gluten
  • • 1 tbsp cumin
  • • 1 tbsp garlic salt
  • • 1 cup water
Steps
  1. 1. In a pot, combine the six cups of water with the soy sauce, hoisin sauce, garlic cloves, bay leaves, thyme, the onion and the liquid smoke.
  2. 2. Bring to a boil.
  3. 3. While the water heats up mix in a large bowl the vital wheat gluten, cumin, and garlic salt.
  4. 4. Slowly start adding one cup of water and stir into a sponge-like dough (this should not be excessively wet).
  5. 5. Knead until the dough has a stringy texture.
  6. 6. Cut the dough into chunks and place into the boiling broth.
  7. 7. Simmer broth for an hour on low heat.
  8. 8. Once its cooked, cut it into even smaller pieces (resembling carne asade)
  9. 9. On medium heat, heat up a skillet with 2 tbsp of olive oil and sauté until crispy. Season meat as desired.
  10. 10. Serve in a corn tortilla with toppings
