  • 4 teaspoons Madras curry powder divided
  • 4 large eggs
  • 4 tablespoons avocado oil divided
  • 1 small red bell pepper cored and thinly sliced
  • 1 medium carrot cut into matchsticks
  • ½ small onion peeled and thinly sliced lengthwise
  • ½ teaspoon toasted sesame oil
  • 2 scallions thinly sliced
