Green Soup
Nutritional powerhouse + comfort food
Servings: 4
Ingredients
  • 4c chicken stock
  • 2c diced potatoes
  • 4c shredded zucchini
  • 4c chopped spinach, kale, and/or chard
  • 1c chopped scallions or chives
  • 1-2 Tbl minced ginger
  • Salt to taste
Steps
  1. Bring stock, potatoes, and zucchini to a boil; simmer 10-15 minutes until potatoes are soft.
  2. Add the greens and scallions; simmer 5 mins.
  3. Add the ginger, adjust salt. Blend with immersion blender, if desired.
Notes
  • For best nutrition, use homemade stock. If using store-bought, consider adding supplemental gelatin or collagen to increase nutrient absorption and protein levels.
