Leftover Roasted Lamb Gyros
Ingredients
  • subheading: For the Lamb:
  • 1 lb of leftover cooked lamb (see notes about cooking lamb if needed)
  • ½ teaspoon each of chopped fresh or dried rosemary and thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • ¼ teaspoon chili flakes
  • ¼ teaspoon garlic powder (optional)
  • Salt and black pepper to taste
  • 3 tablespoons olive oil, divided, plus more for the pitas
  • 1 lemon sliced into wedges for squeezing over lamb and for serving
  • Chopped fresh parsley for garnish

  • Homemade tzatziki sauce or storebought (my homemade recipe is easy and delicious)
  • 1 red onion, peeled and thinly sliced
  • 2 medium tomatoes, sliced or diced
  • 2 Persian cucumbers sliced or chopped
  • Crumbled feta cheese
  • Kalamata Olives or black olives
  • Fries
  • Sliced lettuce
