Roasted Tandoori Chicken
Ingredients
  • 4 to 6 bone-in, skin on chicken breasts
  • 3 tbsp. olive oil
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • 1 tsp. ground turmeric
  • 1 tsp. ground cayenne
  • 1 tbsp. curry powder or garam marsala
  • 1 tbsp. sweet paprika
  • 1 cup unsweetened, full-fat coconut milk (I use Thai Kitchens, and I blend it first so that it is no longer separated)
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 1 tbsp. freshly grated ginger
  • 1 tsp. salt
  • Fresh cilantro leaves, for serving (optional)
