Pumpkin Muffins with icing
Ingredients

  • 1 ½ cups raw cashews, soaked in water 4 to 8 hours
  • ¼ cup maple syrup
  • 2 to 4 tablespoons unflavored and unsweetened non-dairy milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¾ teaspoon salt
