Refreshing Farro Salad
Ingredients

  • 1½ cups cherry tomatoes halved
  • 1½ cups green bell pepper diced
  • ½ cup corn canned
  • ½ cup pitted olives sliced
  • ⅓ cup red onion chopped
  • ⅓ cup parsley finely chopped
  • 1 can (15 oz) chickpeas
  • 2 ounces feta cheese or dairy-free feta, optional
  • subheading: VINAIGRETTE:
  • 2 to 3 tablespoons extra virgin olive oil
  • 2 tablespoons vinegar apple cider or red wine vinegar
  • 2 tablespoons lemon juice
  • ½ teaspoon dried oregano
  • ½ teaspoon salt or more to taste
  • ¼ teaspoon black pepper
