  • salt and black pepper, to taste
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 16 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 ¾ cups low sodium beef broth, one 14.5 ounce can
  • 2 teaspoons Dijon mustard
  • ½ teaspoon dried thyme, or 1 teaspoon fresh thyme
  • cooked egg noodles, pasta, mashed potatoes or rice, for serving
  • chopped fresh parsley, optional, for serving
