Spiced Apple Cider Braised Pork and Squash
Ingredients
  • 4 to 4 ½ pound boneless pork shoulder roast (also known as a Boston butt)
  • Kosher salt
  • Freshly ground black pepper
  • Canola oil
  • 1 onion, sliced
  • 6 to 8 cloves garlic, crushed
  • 3 cups apple cider
  • 1 tablespoon honey
  • 1 bay leaf
  • 1 cinnamon stick
  • 5 to 6 sprigs thyme
  • ½ teaspoon crushed red pepper flakes, optional
  • About 2 cups chicken or vegetable stock
  • 1 butternut squash, peeled, seeded and cut into 1-inch pieces
