Heidi Sze's Beef Stew with Sweet Potato and Cinnamon
Ingredients
  • 500g beef chuck steak, cut into 4cm chunks
  • 1 large red onion, finely diced
  • 5 garlic cloves, peeled and smashed
  • ½ Tablespoon ginger, minced
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground turmeric
  • 1 teaspoon fine sea salt
  • ¼ cup + 2 Tablespoons extra virgin olive oil
  • 2 anchovy fillets, very finely chopped (see tips above)
  • 1 teaspoon red wine vinegar
  • 3 dried bay leaves (or 2 if using fresh)
  • 800g sweet potato, peeled and cut into 2 to 3cm chunks
  • 3 cups beef broth (see tips above)
  • Fresh coriander leaves, to serve
  • Fresh lime juice, to serve
  • Couscous, to serve
