Low Carb Meatloaf Muffins

Ingredients

  • 1 to 1.5 lb Ground Beef
  • 1 cup crushed pork rinds
  • 1 Cup Chopped Onion (the finer the better)
  • 2 celery stalks (optional)
  • 1 Egg (add another if mixture is too dry)
  • ¼ Teaspoon Onion Powder
  • ¼ Teaspoon Garlic Powder
  • ¼ Teaspoon Italian Seasoning
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Black pepper
  • Sugar-free Catsup (optional)
Steps
  1. Preheat oven to 350 F and grease a muffin pan
  2. In a bowl combine all the ingredients (except catsup) and knead together until well combined.
  3. Shape approx ¼ cup of mixture into a ball and put in muffin pan.
  4. Should make 12 mini meatloaves
  5. Top each mini meatloaf with sugar-free Ketchup (optional)
  6. Bake for about 20 minutes (differs by oven)

  • Approx 170 calories each and 2 carbs
