Watermelon Pickles
Ingredients
  • 7 # watermelon rind
  • (Chunked white part of rind only)
  • 7c sugar
  • 2c vinegar
  • ½ t clove oil
  • ½ t cinnamon oil
Steps
  1. Trim rind to yield 7pounds of white part of rind.  Soak in lime water ( 1 T lime per 1 qt water )  overnight.  Drain, rinse.  Cook I water till tender.  Drain.  Make syrup and heat to boil.  Pour over rinds and let set overnight.  Next day drain, heat syrup and pour back over rind.  Let set overnight again.  Next day heat syrup and rind, pack in jars and seal.  10 minute water bath.
Notes
  • You can skip the lime soak if you use calcium chloride granules when you pack them.
