White Bean and Bacon Soup (Instant Pot or Crock-Pot) - 3 points on DB Plan, but always double check your points
Ingredients
  • 3 (15 oz) cans white beans, rinsed and drained
  • 6 slices bacon, chopped - I OMITTED THIS AND USED 1 TABLESPOON BACON GREASE
  • 1½ cups onions, chopped
  • ¾ cup carrots, chopped - I HAD SHREDDED CARROTS, WORKED GREAT, IT GAVE THE SOUP TEXTURE
  • ½ cup celery, chopped
  • 2 tablespoons tomato paste
  • 4 cups reduced-sodium chicken broth - I USED 4 CUPS WATER INSTEAD WITH A BIG HEAPING TBSP CHICKEN BETTER THAN BOUILLON
  • 1 teaspoon Italian seasonings or ½ teaspoon each oregano and basil
  • ⅛ teaspoon red pepper flakes
  • 1 tsp. salt
  •  
  • Black pepper to taste
  • Chives or scallions, chopped for garnish, optional
