Ingredients

- 1 tin of chopped tomatoes
- 70g tomato purée
- 80g sliced red onion
- 5 garlic cloves
- 100g spinach (I used frozen but fresh would work too)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Pinch of sugar
- 150g dried orzo
Steps
- subheading: Method:
- Put all the ingredients apart from the orzo into the pot with half a cup of water (the cup that came with the IP) and pop the lid on and set to sealing - push manual, high pressure, 10 minutes then quick release and give it a go mix around, add the orzo and another half cup water and then lid on again, set to sealing, 5 minutes high pressure and quick release..
- I served topped with lots of Parmesan, would work equally well with cheese of your choice :)
