Smothered Pork Chops with Mushrooms (Patti Labelle Recipe)

  • 2 tablespoons vegetable oil, divided use
  • 4 (8 ounces each) center-cut pork chops with bone-in
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon freshly ground black pepper (plus more to taste)
  • 1 medium onion, chopped
  • 2 medium stalk celery, chopped
  • ½ cup seeded and chopped green bell pepper
  • 2 cloves garlic, chopped
  • 10 ounces fresh mushrooms, sliced
  • 3 tablespoons all-purpose flour
  • 1 ½ teaspoons chopped fresh thyme (or ½ teaspoon dried thyme)
  • ½ cup chicken broth or water (or more as needed)
  • ½ cup milk
  • Hot red pepper sauce to taste
