  • ½ cup cashews-soaked for 3 to 4 hours, then drained & rinsed
  • 1 tsp. lemon juice
  • ½ tsp. apple cider vinegar
  • ¼ tsp. salt
  • ¼ cup water
  • subheading: To assemble:
  • ½ cup salsa + more, if needed
  • 1 to 2 green onions-cut into rounds w/kitchen shears
