Plant-Based Creamy Hatch Potato Corn Chowder
Ingredients
  • 2 lbs organic russet potatoes, peeled and chopped into ½ inch pieces
  • 1 lb corn, fresh or frozen
  • 3 cloves garlic, chopped
  • 1 bell pepper, red, orange or green
  • 1 jalapeno pepper, seeded and minced
  • 2 cups chopped yellow onion
  • 1 large carrot, chopped
  • 3 roasted, peeled and seeded Hatch chiles (or 6 ounces canned green chiles)
  • 1 tsp chili powder or chipotle chili powder
  • 1 tbsp fresh basil or 1 tsp dried basil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 3 cups unsalted vegetable stock or broth
  • 1 cup cashews, soaked for at least 2 hours
