Quick Lemon Curd
Ingredients
  • ½ cup lemon juice
  • 2 tbsp lemon zest
  • ¾ cup confectioners sweetener
  • ½ cup butter, melted
  • 2 whole eggs
  • 3 egg yolks
  • ¼ teaspoon salt
Steps
  1. Add the eggs into a large mixing bowl and whisk.
  2. Add in the sweetener and mix for 2 minutes or until well combined.
  3. Add the remaining ingredients and mix well.
  4. Cook in the microwave for 1 minutes, remove and whisk.
  5. Place back in the microwave to cook for another minute, remove and whisk.
  6. Repeat the process 3 more times, for a total of 5 minutes.
  7. Allow to cool at room temperature for 10 to 15 minutes, then store leftovers in the fridge for up to a week, or in the freezer.
