Morrocan Lentils
Lentils
Ingredients
  • 8 oz pumpkin, chopped
  • 8 oz flavorful meat, chopped small
  • 1 lb lentils
  • 3 tomatoes, chopped
  • 2 onions, chopped
  • 4 to 5 garlic cloves
  • Paprika
  • Ginger
  • Salt & pepper
  • 1 TB or 1 cube beef bullion
  • Bunch cilantro, chopped
Steps
  1. Rinse the lentils 3 times.  Cover the lentils with cool water and boil 20 min
  2. Saute onions in oil in large pan/pot, salt and pepper.  Add garlic when softened.  Add meat, tsp ginger and paprika, more salt and pepper.  Add about ½ water to onion mixture.
  3. Add the lentils with their water to the onion pan, add tomatoes and pumpkin.  Add a jalapeno with slices in it for heat, if desired.  Add Cilantro, cover and simmer, stirring occasionally until lentils are cooked through.
