Mustard-Roasted Potatoes
Ingredients
  • 2 pounds small red potatoes, unpeeled, halved
  • 6 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons whole-grain mustard
  • 4 teaspoons chopped fresh rosemary, divided
  • 1 teaspoon table salt, divided
  • ½ teaspoon pepper
  • 2 tablespoons Dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon grated lemon zest plus 1 teaspoon juice

  • Use small red potatoes measuring 1½ to 2 inches in diameter.
