Steamed Mussels in Red Sauce
Ingredients

  • 1 onion, chopped fine
  • 6 garlic cloves, minced
  • 3 tablespoons chopped fresh parsley
  • 2 cups drained canned tomatoes in thick puree, chopped (from 1 [28-ounce] can)
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried red pepper flakes
  • 4 pounds mussels, scrubbed and debearded
  • ⅛ teaspoon freshly ground black pepper
  • Kosher salt, if needed
  • Garlic toast (optional)
