Rum and Raisin Chocolate Pudding
You can replace the rum with any liquor and substitute your fave icecream.
Ingredients
  • 100g chopped unsalted butter, at room temperature
  • ⅓ cup (80g) firmly packed brown sugar
  • ⅓ cup (80ml) pure maple syrup
  • 2 large eggs, at room temperature, whisked
  • 1 ½ cups (225g) self-raising flour
  • ½ cup (125ml) milk
  • 2 tbs dark rum (see note)
  • ¾ cup (120g) raisins
  • 80g chopped chocolate (dark or milk)
  • Ice cream (we used rum & raisin flavour)
  • Chocolate sauce, to serve
