One Pan Garlic Parmesan Chicken and Vegetables
Ingredients
  • 6 chicken tenders (or 2 to 3 chicken breasts, cut into 2 inch strips)
  • ⅓ cup olive oil
  • 1 Tablespoon garlic , minced
  • ¾ cup plain breadcrumbs (or panko bread crumbs)
  • ½ cup freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt and freshly ground black pepper
  • fresh chopped parsley , for garnish (optional)
  • subheading: For the vegetables:
  • 1 zucchini , cut into ½-inch thick slice, then sliced in half
  • 1 yellow squash , cut into ½-inch thick slice, then sliced in half
  • 1 cup grape tomatoes , sliced into halves
  • 1 to 2 Tablespoons olive oil
  • 2 teaspoons garlic , minced
  • ½ teaspoon Italian seasoning
  • salt and freshly ground black pepper
  • ½ cup freshly grated parmesan cheese
