Mushroom Chow Mein Is Full of Umami Flavor
Ingredients

  • 5 ounces fresh shiitake mushrooms, cut into thick slices
  • 3 cloves garlic, minced

  • ¼ green cabbage, thinly sliced

  • 2 Tbsp. dark soy sauce
  • 1 Tbsp. Chinese rice wine
  • 2 Tbsp. kecap manis (sweet soy sauce), or 1 Tbsp soy sauce mixed with 1 Tbsp. sugar
  • 2 Tbsp. hoisin sauce
  • ⅓ cup vegetable stock
  • 1 Tbsp. sesame oil
  • ¼ tsp. white pepper

  • Chopped spring onions
  • Toasted sesame seeds
  • Red pepper flakes
