  • ½ cup diced onion

  • 4 tablespoons bacon fat or butter
  • 6 cups water
  • 2 teaspoon salt
  • 4 cups diced potatoes (peeled or not)
  • 30 ounce can evaporated milk, or half and half ( 4 cups minus 2 ounce, or 3 ¾ cups)
  • Garnish: chopped parsley, dill, celery leaves, or paprika
