Bread & Butter Pickles

Ingredients
  • 25 lb pickling cucumbers
  • 6 Q vinegar
  • 11 lb sugar
  • 24 to 75 oz water
  • 4.6 oz mustard seeds
  • 4 tsp turmeric powder
  • 1.5 tsp ground cloves
  • 1.4 oz celery seed
  • 1.4 oz peppercorns
  • 1 head garlic
  • 10 to 12 arbol chilis
Steps
  1. slice cucumbers ΒΌ inch thick, sprinkle with salt and set for 2 to 4 hours. Rinse well 6 to 7 min
  2. bring remaining ingredients to a boil then add cucumbers and bring back to a simmer, then remove
  3. transfer to containers
