Italian Potato Salad
Ingredients
  • One and a half pounds unpeeled Yukon potatoes.
  • 1 pound green beans cut into 1 inch length.
  • subheading: For the vinaigrette:
  • ½ cup olive oil.
  • ¼ cup white wine vinegar.
  • ¼ cup parsley leaves whole.
  • ¼ cup dill leaves.
  • ¼ cup capers.
  • One shallot sliced thin
  • 6 oz. Grape tomatoes Cut in half.
  • One anchovy diced/minced.
Steps
  1. Cover potatoes with 1 inch of water, cook for seven minutes.
  2. Add green beans to the pot with potatoes and cook another seven minutes.
  3. Drain potatoes and green beans.
  4. For the vinaigrette: combine ingredients and allow to marinade.
  5. Pour over potatoes and green beans.
