  • 160 ml (⅔ cup) unsweetened non-dairy milk (I use soy)
  • 2 teaspoons cider or white wine vinegar
  • 1 teaspoon vanilla extract
  • finely grated zest of 2 large oranges

  • 50 g (½ cup) ground almonds (almond flour)
  • 300 g (2 ⅓ cups) plain (all-purpose) flour
  • 50 g (½ cup) cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate of soda (baking soda)
  • 1 teaspoon mixed spice or pumpkin spice
  • ½ teaspoon cinnamon
  • 100 g (⅔ cup) chocolate chips
