Zucchini Fritters with Dill Dip
Ingredients
Steps
  1. 1. 1 large zucchini or 2 small - total weight ¾ pound
  2. 2. 1 clove of garlic peeled and minced
  3. 3. ¼ Cup fresh basil; we grown our own, but you can find it at any grocery store
  4. 4. ¼ cup fresh oregano. Ditto
  5. 5. 1 tablespoon lemon zest
  6. 6. 2 organic eggs
  7. 7. 2 Tbs almond flour
  8. 8. ¼ teaspoon Onion powder or to taste
  9. 9. ½ teaspoon salt
  10. 10. ¼ teaspoon of pepper or to taste
  11. Mix all ingredients together use a teaspoon and put in a pan coated with pam flip and brown. Remove from pan
  12. Avocado Onion Dip
  13. Ingredients
  14. 1. 6 ounces avocado, we prefer Hass avocados - they are tastier
  15. 2. ½ teaspoon of onion powder or to taste
  16. 3. ½ teaspoon of Vegenaise, available at most health food stores
  17. 4. ¼ tsp Salt
  18. 5. ½ cup finely chopped dill
  19. Directions
  20. Cut avocado in half and remove the seed.
  21. Scoop meat with a spoon and place in a bowl.
  22. Add all other ingredients
  23. Mash until smooth.
