Pork Chops with Mustard Sauce
Ingredients
  • 4 pork chops (¾ inch thick)
  • 3 ⁄4 teaspoon salt (or as desired)
  • 1 ⁄2 teaspoon fresh ground pepper
  • 2 tablespoons vegetable oil (I use olive oil)
  • 1 ⁄4 cup shallot , finely chopped
  • 2 tablespoons unsalted butter
  • 1 ⁄2 cup reduced-sodium chicken broth
  • 1 ⁄4 cup Dijon mustard , country-style
  • 2 tablespoons heavy cream (I use fat-free half and half)
  • 2 teaspoons fresh lemon juice
