Ingredients
- Lower layer
- 300g glutinous Rice
- 75g coconut milk
- 1 tsp salt
- 3pc pandan leaves knotted.
- 1pc banana leaf
- Upper layer
- 200ml fresh pandan juice (30 pandan leaves).
- 7tbsp tapioca flour
- 5tbsp plain flour
- 200ml coconut milk
- 3 eggs
- 200g caster sugar
- Pinch salt..
- For bluepea extract-
- 3tbsp hot water
- 6 blue pea flowers
Steps
- Thanks Evelyn, here's the recipe that I followed -
- Method
- 1. Rinse n soak Glutinous Rice in water
- for at least 4 hrs
- 2. Combine coconut milk n salt n mix well
- Set aside.
- 3. Bring water in the steamer to a boil n
- steam glutinous Rice over high heat for
- 25mins, slowly add in the coconut milk
- mixture n mix well. Steam over high
- heat for another 10mins until cooked
- remove n fluffy the rice.
- 4. Transfer to 8" Round mould n use
- banana leaf to level n press until firm.
- 5. Make the bluepea extract by adding 3tbsp of
- boiling water to the flowers. Wait a min,
- and extract the juice.
- 6. Spoon the bluepea extract over the rice in
- random spots steam for another
- 10mins.
- 7. Top layer
- Combine pandan juice with flour.
- Mix well add in eggs with coconut
- milk and sugar before adding in the flour
- mixture. Combine both mixture n mix
- well. Sieve mixture into a pot.
- 10. Stir the mixture over low heat until
- thick but runny enough to pour onto the glutinous
- Rice. Steam over high heat for
- 30mins until cooked. Let it cool...
- Slice to serve.
