  • 2 TABLESPOONS UNSALTED BUTTER, CUT INTO PIECES
  • ½ CUP FRESHLY GRATED GRANA PADANO
  • BROCCOLI
  • ¼ CUP EXTRA-VIRGIN OLIVE OIL
  • 3 GARLIC CLOVES, CRUSHED AND PEELED
  • 4 OUNCES SLAB BACON, CUT INTO MATCHSTICKS
  • 1 LARGE HEAD BROCCOLI, STEMS PEELED AND SLICED ¼ INCH THICK, HEAD CUT INTO 1-INCH FLORETS
  • ½ TEASPOON KOSHER SALT
  • ¼ TEASPOON CRUSHED RED PEPPER FLAKES
  • 2 OUNCES AGED PROVOLA, SHREDDED ON THE COARSE HOLES OF A BOX GREATER
