  • 15 ounce can diced tomatoes
  • 32 ounces vegetable stock
  • 1 leaf bay leaf
  • 1 ½ teaspoon kosher salt
  • ½ cup long grain white rice
  • ¼ cup grated Parmesan cheese for garnish
  • 1 tablespoon chopped parsley for garnish
