Scalloped Roast Lemon Potatoes
Ingredients
  • 6 to 7 large Yukon Gold (or other yellow fleshed potato)
  • ½ cup extra-virgin olive oil
  • 1 Tbsp. of mustard (ball park or dijon)
  • juice of 1 lemon
  • 1 ½ to 2 Tbsp. sea salt
  • 1 tsp. ground pepper
  • optional 2 tsp. of dried Greek oregano or fresh thyme or rosemary
  • pre-heated 425F oven
