Banana muffin

  • Recipe: Banana Muffins
  • Please use overripe bananas.
  • Do not overmix the batter.
  • Ingredients:
  • 2 cups all purpose flour
  • ½ teaspoon cinnamon powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 medium overripe bananas, mashed
  • 2 oz or ¼ cup unsalted butter, melted
  • ¼ cup milk
  • 1 large egg, room temperature
  • 1-½ teaspoons vanilla
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • *Optional toppings:
  • ½ cup walnuts, toasted and chopped
  • Chocolate Chips - semisweet or milk chocolate, your choice
  • Preheat oven to 190C/375 degrees F.  Lightly grease regular muffin pan or line with muffin papers.
  • In a large bowl, mix 2 cups of flour, cinnamon powder, baking soda and salt.
  • In another bowl, blend together mashed bananas, melted butter, milk, egg, vanilla extract and both sugars.
  • Stir the banana mixture into the flour mixture just until moistened or combined, do not over mix.
  • Scoop or spoon batter into prepared muffin pan equally divided into 9 portions.
  • *Arrange walnuts and chocolate chips on top of the batter if using.  I put more on the center, it will spread during baking.
  • Bake in preheated oven for 10 minutes, after 10 minutes lower the oven temperature to 180C/350 degrees F and bake for another 8 to 10  minutes or until a toothpick inserted into center of a muffin comes out clean. (In my oven it was ready at 18 minutes)
  • Allow to cool in the pan 5 to 10 minutes, then transfer the banana muffins to a wire rack to cool completely.
