- Recipe: Banana Muffins
- Please use overripe bananas.
- Do not overmix the batter.
- Ingredients:
- 2 cups all purpose flour
- ½ teaspoon cinnamon powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 medium overripe bananas, mashed
- 2 oz or ¼ cup unsalted butter, melted
- ¼ cup milk
- 1 large egg, room temperature
- 1-½ teaspoons vanilla
- ¾ cup light brown sugar, packed
- ¼ cup granulated sugar
- *Optional toppings:
- ½ cup walnuts, toasted and chopped
- Chocolate Chips - semisweet or milk chocolate, your choice
- Preheat oven to 190C/375 degrees F. Lightly grease regular muffin pan or line with muffin papers.
- In a large bowl, mix 2 cups of flour, cinnamon powder, baking soda and salt.
- In another bowl, blend together mashed bananas, melted butter, milk, egg, vanilla extract and both sugars.
- Stir the banana mixture into the flour mixture just until moistened or combined, do not over mix.
- Scoop or spoon batter into prepared muffin pan equally divided into 9 portions.
- *Arrange walnuts and chocolate chips on top of the batter if using. I put more on the center, it will spread during baking.
- Bake in preheated oven for 10 minutes, after 10 minutes lower the oven temperature to 180C/350 degrees F and bake for another 8 to 10 minutes or until a toothpick inserted into center of a muffin comes out clean. (In my oven it was ready at 18 minutes)
- Allow to cool in the pan 5 to 10 minutes, then transfer the banana muffins to a wire rack to cool completely.
