Ingredients
  • 12 oz andouille sausage, sliced into rounds
  • ¾ cup 2 tbsp peanut oil
  • ¾ cup flour
  • 1 onion, diced
  • 2 celery ribs, sliced
  • 1 green pepper, diced
  • 1 jalapeño, diced
  • Kosher salt, as needed (to taste)
  • 6 cloves garlic, minced or grated
  • 8 oz fresh okra, chopped (or a bag of chopped frozen okra)
  • 2 tsp smoked paprika
  • 1 tsp dry mustard
  • 1 tsp cracked black pepper
  • 1 tsp cayenne
  • ½ tsp dried oregano
  • 6 cups unsalted chicken stock, preferably homemade
  • 2 bay leaves
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • 6 bone-in chicken thighs, skin removed
  • 2 packets unflavored gelatin (optional)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 12 oz peeled and deveined shrimp
  • ¼ cup finely chopped parsley
  • 1 bunch of scallions
  • 1 tsp filé powder (optional)
  • Hot sauce, for serving
  • Cooked rice, for serving
