Dairy-Free Broccoli Cheddar Orzo
Ingredients
  • 2 tbsp vegan butter
  • ½ cup onions, diced
  • ½ large shallot, roughly chopped
  • 4 garlic cloves, minced
  • 1 cup carrots, shredded
  • 7 oz dried orzo
  • 2 tbsp Better Than Bouillon vegetable base
  • 2 tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • ½ tsp paprika
  • 1 tsp dried herbs
  • 2 cups water or vegetable broth
  • 1 ½ cups dairy-free half & half (option to add more for a thinner consistency)
  • 2 ½ cups broccoli, roughly chopped (option to add more for a thinner consistency)
  • 2 tbsp nutritional yeast
  • 1 cup vegan cheddar cheese, shredded
