One Pot Creamy Spinach Artichoke Chicken
Ingredients
  • 4 (6 oz.) boneless, skinless chicken breasts, pounded and cut into thin cutlets
  • ¼ cup all-purpose flour, gluten-free, or almond flour
  • 1 tsp olive oil
  • 2 cups fresh baby spinach, chopped
  • 1 (14 oz) can artichoke hearts in water, drained and quartered
  • 2 Tbsp parsley, fresh and chopped
  • 4 cloves garlic, minced
  • 2 Tbsp light butter- I use I can’t believe it’s not butter, Smart Balance, or Land O’ Lakes light butter made with canola oil
  • ½ cup low sodium chicken broth
  • ½ cup light sour cream or non fat plain yogurt
  • 4 oz. light cream cream cheese, room temperature
  • ¼ cup grated Parmesan
  • Kosher salt and freshly ground black pepper, to taste
