a Completely Vegan Omelette
Ingredients

  • 2 tbsp tapioca starch/flour

  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp Old Bay seasoning (optional) * can sub chili powder
  • ¼ tsp sea salt
  • ¼ tsp ground pepper
  • 1 to 2 tbsp vegan butter (for frying omelette)

  • 1 cup mushrooms, roughly chopped
  • 1 tbsp vegetable oil
  • 2 green onions, finely chopped
  • sea salt and ground pepper, to taste
  • 1 cup shredded vegan cheddar cheese
