  • 3 oz kale stemmed & sliced (≈3 cups)
  • 9 oz shredded red cabbage (≈3 cups)
  • 6 oz sugar snap peas bias-sliced in half (≈2 cups)
  • 2 carrots cut into matchsticks (≈1 cup)
  • sea salt
  • freshly ground black pepper
  • subheading: FOR THE PEANUT DRESSING:
  • 1⁄3 cup fresh lime juice
  • 2 2⁄3 tablespoons peanut butter
  • 2 tablespoons pure maple syrup
  • 2 teaspoons fresh ginger grated
  • 1⁄2 teaspoon crushed red pepper flakes
  • subheading: FOR SERVING:
  • 4 scallions (white & green parts) sliced (≈ 1⁄2 cup)
  • 2 tablespoons peanuts crushed
