Whole30 Instant Pot Thai Coconut Soup
Ingredients
  • 1⁄2 yellow onion, thinly sliced
  • 8 kaffir lime leaves, dried or fresh
  • 1 stalk lemongrass, sliced diagonally into 3 to 4 pieces and crushed with the butt of a knife
  • 1 pound boneless chicken thighs, trimmed of all fat and thinly sliced
  • 1⁄2 cup Chicken Bone Broth
  • 4 tablespoons fish sauce
  • 1 cup sliced white button mushrooms
  • 8 whole Thai chilies
  • 2-inch piece galangal, or fresh ginger, thinly sliced
  • 2 13.5-ounce cans full-fat coconut milk
  • 1 tablespoon fresh lime juice
  • ½ cup halved cherry tomatoes
  • Garnishes: chopped fresh cilantro
  • optional : 2 tablespoons coconut sugar (gives it an authentic restaurant flavor)
